Cottage cheese seems to be all the rage this year; there are so many ways to enjoy it, but this might be one of my favorites! This recipe is so easy, a delicious Mediterranean-inspired salad over a bed of cottage cheese. The cottage cheese almost acts like a ricotta or feta cheese in this recipe, ensuring every bite of this crisp and delicious salad is coated with creamy, delicious cheese. In addition to tasting great, cottage cheese is such a great way to add protein to every meal. Serve this salad as a side dish, or as a main course with some added protein!
What you’ll need to make this delicious and healthy salad
- reduced fat cottage cheese
- cucumbers
- red onion
- cherry tomatoes
- kalamata olives
- fresh basil
- olive oil
- balsamic vinegar
- kosher salt
- fresh cracked pepper
- optional: balsamic glaze
How to make this Mediterranean-inspired salad over cottage cheese
If eating this salad right away, you can combine all of the ingredients. However, if using for meal prep, I advise leaving the balsamic vinegar and olive oil off to the side until ready to eat, to prevent it from getting soggy.
To prepare the salad, finely chop the vegetables. Combine in a bowl together. If serving right away, add the olive oil, balsamic vinegar, salt and pepper and toss to combine. If meal prepping, stop at this step and store accordingly.
To serve, toss the vegetables with the olive oil, balsamic vinegar, salt and pepper. Empty one container of the cottage cheese into a bowl or plate, and top with the tossed salad. Optional: finish with a drizzle of balsamic glaze.

Ingredients
- 10 oz reduced fat cottage cheese, two 5 oz containers
- 1 cup cucumber, diced
- 1/2 cup red onion, diced
- 1/2 cup cherry tomatoes, diced
- 2 tbsp kalamata olives, diced
- 2 tbsp basil, chopped
- 1 tbsp balsamic vinegar
- 1/2 tbsp olive oil
- 1/2 tsp kosher salt
- fresh cracked pepper
Instructions
- Finely dice the cucumbers, tomatoes, red onion, olives, and basil.
- Season with salt and pepper.
- Combine the olive oil and vinegar.
- If serving right away, add the oil and vinegar to the salad and toss to combine.
- If using for meal prep, set the dressing aside.
- If serving immediately, add one container of cottage cheese to a bowl or plate, and then top with the salad.

Who knew I like cottage cheese!! And its a good substitute for pasta which is why I tried it. I usually do these veggies over pasta with a homemade dressing. Now I can switch out the pasta! 🏆

Made this for lunch today and so glad I did! So light and refreshing yet still very fulfilling. Not a big onion fan especially raw onions, however, I followed the recipe and kept them in and they were delicious.

As someone who typically tolerates, not enjoys, cottage cheese I was shocked how much I liked this! I served it with Greek-inspired turkey meatballs for a little extra protein, but it was very filling on its own. It was still delicious on days 4 and 5 (with dressing and cottage cheese kept separate until that point).
