Simply simmer whole eggs in a skillet with garlic and salsa verde; and that’s it! My favorite way to serve this recipe is with corn tortillas.
What is salsa verde, and will I like it?
Salsa verde quite literally means “green sauce.” It is a spicy green sauce made of tomatillos and green chili peppers, often used in Mexican cuisine. If you like regular salsa, you most likely will enjoy salsa verde. It can be a little more thin in texture, but it is packed with flavor. The simple but powerful flavors of the salsa verde do all of the seasoning in this dish, and truly elevate the eggs.
What you’ll need to make this recipe
Talk about simple, this recipe requires less than a handful of ingredients. And truly, you can change this recipe up based on whatever you have on hand; you can add cheese, different spices or herbs, or whatever your heart desires. Here is how to make the basic recipe:
- garlic
- olive oil spray
- jarred salsa verde
- I used this one, but any brand will do (or of course, making your own!)
- eggs
- salt and pepper
- fresh cilantro
- optional: corn tortillas for serving
How to make this quick and easy salsa verde egg skillet
This recipe is so easy to make, and only uses one pan! You could not think of an easier or more delicious breakfast. Start out by mincing the garlic finely. Next, add olive oil spray to the pan, and add the minced garlic to the pan. Turn the heat on medium so that the garlic slowly begins to sizzle. This prevents it from burning or cooking too quickly. After sauteeing the garlic for a few minutes, add the salsa verde to the skillet and allow it to simmer. Next, crack four eggs into the skillet. Increase the heat to medium high. Cover the pan with a lid so that the eggs cook and steam to your desire. Season with salt and pepper, garnish with fresh parsley.
Serve alone or with corn or flour tortillas.

Easy Salsa Verde Egg Skillet
Equipment
- skillet / frying pan with lid
Ingredients
- olive oil spray
- 2 cloves garlic, minced
- 1 cup salsa verde, used: 365 Brand
- 4 eggs
- kosher salt
- fresh cracked pepper
- 2 tbsp cilantro, fresh
Instructions
- Finely mince the garlic.
- Add olive oil spray to the skillet, and add the minced garlic.
- Turn the heat on to medium.
- Saute the garlic for 1-2 minutes or until fragrant.
- Add the salsa to the skillet.
- Simmer for 1-2 minutes, then crack four eggs into the skillet.
- Increase the heat to medium high.
- Place the lid on the skillet, and allow the eggs to cook through to your desire (my preference is over medium).
- Season with salt and pepper to taste; garnish with fresh cilantro.
