To start, combine your brine ingredients. Submerge the chicken breasts in the brine for a minimum of one hour. You can let it sit all day–the longer the better!
When you’re ready to cook, preheat your oven to 400F and line a baking sheet with foil.

Healthy Oven Baked Cornflake Crusted Chicken
Equipment
- sheet pan fitted with wire rack
Ingredients
- 1.5 lbs chicken breast, sliced into 6 pieces
Brine
- 1 cup light buttermilk
- 1/2 cup dill pickle juice
- 2 tsp onion powder
- 2 tsp garlic powder
- 1/2 tsp cayenne pepper
Breading
- 1/4 cup all-purpose flour
- 2 tsp garlic powder
- 2 tsp onion powder
- 1 tsp kosher salt
- 1/2 tsp cayenne pepper
- 5 oz cornflakes, crushed
- non-stick cooking spray
Instructions
- Combine the brine ingredients and submerge the chicken breasts in the brine for a minimum of 1 hour, up to all day (the longer the better).
- When ready to cook, preheat the oven to 400F and line a baking sheet with foil.
- Top the baking sheet with a wire rack sprayed with cooking spray. Prepare the breading station.
- Add the garlic powder, onion powder, kosher salt and cayenne to the flour in a shallow bowl.
- Crush the cornflakes and pour them into a different shallow bowl.
- Remove the chicken breasts from the brine, wiping off any excess brine, and set the brine aside.
- Dredge the chicken breasts in the flour mixture to coat on all sides.
- Next, dip the floured chicken breasts into the reserved brine, and then coat them in the cornflakes.
- Arrange the coated chicken breasts on the wire rack and spray with more cooking spray. Bake for 40 minutes or until cooked to 165F.

This was the BEST crispy chicken! We put them on a Martin potato roll that we toasted in the cast iron grill and topped the chicken with lettuce and Chick-fil-A sauce! My son used hot sauce! EVERYONE raved about the crunch and flavor! The next. day we are still talking about how great they were! Make them, yiu won’t be disappointed!!!

This recipe was much easier to make than I expected it to be! Sooo delicious, perfectly cooked chicken and made it a sandwich like Steph suggested. Will make again (and again!)

This is absolutely fabulous … I don’t know why I waited so long to try this recipe as all of Steph’s are great. Love the specificity of 5 oz. cornflakes and 1/4 c. flour as there was very little waste. Suggestions: 1) I Watch carefully while baking the 6 breaded slices as they were crispy crunchy and already over 17o° after only 30 min.; and 2) Stir the brine while soaking the chicken and while dipping it during the breading process, to make sure the spices haven’t sunk to the bottom of the liquid. Great recipe!
