Asian Inspired Beef Burgers with Slaw and Pickled Cucumbers

Ingredients
Burger Patties
- 1 lb 96/4 extra lean ground beef
- 2 scallions, chopped
- 2 garlic cloves, chopped
- 1 tsp ginger, squeeze tube or fresh
- 2 tbsp reduced sodium soy sauce
- 1 tsp sesame oil
- 1 tbsp coconut sugar
- 4 hamburger buns
Pickled Cucumbers
- 2 Persian cucumbers, sliced lengthwise
- 1/2 cup rice wine vinegar
- 1 cup water
- 1 tsp coconut sugar
- 1 tsp kosher salt
- 1 tsp fresh garlic, minced
- 1 tsp fresh ginger, minced
Slaw
- 2 scallions, chopped
- 1 garlic clove, minced
- 2 tbsp reduced sodium soy sauce
- 1 tbsp rice wine vinegar
- 1 tsp coconut sugar
- 3 cups coleslaw mix
Spicy Mayo
- 1/4 cup light mayo
- 1 tsp sriracha, more to taste
Instructions
For the pickled cucumbers:
- Slice the cucumbers lengthwise. Combine the rice wine vinegar, water, coconut sugar, salt, minced garlic and ginger in a large mason jar.
- Microwave for 2 minutes. Submerge the cut cucumbers and close the jar, shaking well. Let sit on the counter at room temperature then store in the fridge until ready to use.
For the slaw:
- Combine the chopped scallions, minced garlic, soy sauce, rice wine vinegar, and sugar at the bottom of a mixing bowl. Toss in the coleslaw mix.
For the mayo:
- Combine the mayo and the sriracha in a small bowl.
For the burgers:
- Add the beef to a mixing bowl. Add the chopped scallions, minced garlic and ginger, and the soy sauce, sesame oil, and coconut sugar. Thoroughly mix the ingredients with your hands, and then form 4 equal sized patties.
- Cook over medium heat in a frying or grill pan sprayed with cooking spray, about 5 minutes per side or to your desired temperature.
Assembly
- To assemble, add 1 tbsp of the spicy mayo to each bun. Top with the burger patty, a portion of the slaw and some pickled cucumbers.
