How to make this salad

Start by draining the canned chickpeas. Rinse them well under cold water. Leave them in a strainer to dry while you prepare the salad.
In a mixing bowl, whisk together olive oil, white wine vinegar and salt. Make sure the dressing is well blended.
Add chopped cucumber, sliced red onion, fresh chives, almonds and basil to the bowl. Stir to combine.

Healthy Herby Chickpea Cucumber Salad
Equipment
- mixing bowl
Ingredients
- 2 cans chickpeas, drained, rinsed
- 1 c cucumber, chopped
- ⅓ c red onion, chopped
- 2 tbsp chives, chopped
- ⅓ c slivered almonds
- ¼ c basil, chopped
- 2 tbsp olive oil
- ¼ c white wine vinegar
- ½ c fat free feta
- ½ tsp kosher salt
Instructions
- Drain and rinse chickpeas. Set aside.
- In a mixing bowl combine the olive oil, white wine vinegar and salt to make the dressing.
- Add in the drained and rinsed chickpeas, cucumber, red onion, chives, kosher salt, almonds and basil.
- Toss all ingredients until well coated with the dressing. Finish with the feta and toss again to combine.
