How to make this cucumber salad
Slice the cucumber in thin slices. Chop the scallions and mince the garlic.
Combine the cucumber, scallions, garlic, sesame oil, coconut aminos and rice vinegar in a bowl or container with a lid. Shake or stir vigorously to mix the dressing evenly and coat the cucumber slices.
Chill in refrigerator for at least 30 minutes to allow flavors to combine.
