One of my favorite healthy lunches is a vibrant and delicious salad especially when the ingredients are in season. Unfortunately, salads can get soggy quick making them not ideal make ahead for the week.
The solution? Mason jar salads! This type of recipe has been a game changer for me on my health journey. By intentionally layering the ingredients of your salad and not mixing with the dressing, your veggies stay crunchy and your fruits stay fresh all week long!
The secret to keeping the salad fresh is layering the dressing on the bottom (or serving on the side) and then building the rest of your salad by layering each ingredient from the densest to the lightest. An added bonus is that these jar salads do not need to be reheated, and they are easy to to prep, transport and clean-up.
