This delicious chicken bacon chopped salad fits all of that criteria- finely chopped romaine, scallions, cherry tomatoes, and corn are combined with crispy cooked bacon, roasted red onions, and tender chunks of chicken breast. This salad it so flavorful on its own, but top with your favorite dressing for the ultimate flavor pop.
What you’ll need to make this easy and delicious chopped salad
This recipe is so easy to throw together with some simple and delicious ingredients:
- romaine lettuce
- cherry tomatoes

- rotisserie chicken breast
- center cut bacon
- I love using center cut bacon in my recipes, since it is real pork bacon (not turkey bacon) but leaner with less fat

- scallions
- frozen corn
- I used the roasted frozen corn from Trader Joe’s for some extra flavor
- your favorite dressing
- I recommend a creamy dressing for this recipe, like a ranch or honey mustard

How to make this recipe
This recipe is beyond easy to throw together. The only cooking required is for the center cut bacon and onion. Start out by preheating the oven to 425F. Thinly slice the red onion and arrange it on a baking sheet lined with parchment paper. On the other side, lay the slices of bacon. Spray with olive oil and season with a pinch of salt and pepper. Roast for about 20 minutes or until the bacon is crispy and the onions are tender and slightly caramelized, then remove from the oven to cool.
In the meantime, thinly chop and shred the romaine lettuce. Chop the scallions, and quarter the cherry tomatoes. Chop the rotisserie chicken breast. Add everything to a large mixing bowl, including the frozen corn. Add the cooked onions and bacon and toss to combine. This huge salad yields 12 cups of salad; suggested serving size: 2-3 cups.
Perfect for meal prep
This salad is perfect to serve immediately, but even better for meal prep. Since we are leaving the dressing off to the side, it packs up really well in the fridge. This recipe makes 12 cups of salad; you can determine your own serving size of anywhere from 1-3 cups of salad. My recommendation is a 2-3 cup serving to yield several servings of lunch for the week.
Chicken Bacon Chopped Salad
Equipment
- baking sheet lined with parchment paper
- large mixing bowl
Ingredients
- 8 slices center cut bacon, I use Oscar Mayer
- olive oil spray
- kosher salt and pepper
- 1 red onion
- 2 chicken breasts, rotisserie chicken breasts; fully cooked
- 3 heads romaine lettuce
- 1 pint cherry tomatoes
- 4 scallions
- 1 cup corn, frozen
- dressing of choice for serving
Instructions
- Preheat the oven to 425F.
- Line a baking sheet with parchment paper.
- Thinly slice the red onion.
- Arrange the red onion on one side of the baking sheet, and the bacon on the other side.
- Spray the red onion with olive oil spray, and sprinkle with a touch of kosher salt and pepper.
- Roast the bacon and onions for 20 minutes or until the bacon is crispy and the onion is cooked, tender and slightly caramelized.
- Thinly shave and chop the romaine lettuce. Quarter the cherry tomatoes, and chop the scallions.
- Chop the rotisserie chicken breast and the cooked red onion. Crumble the bacon.
- Add the lettuce, tomatoes, scallions, corn, chicken breast, cooked red onion, and cooked bacon to the mixing bowl.
- Yields 12 cups of salad. Serve with your favorite dressing.
