Chicken, peppers and onions are all coated in spices and roasted in the oven to make a meal that’s not only full of flavor and healthy, but also easy on cleanup. This recipe takes the classic fajita and makes it healthier and easy to execute. Whether you’re looking for a quick weeknight meal or easy meal prep, these sheet pan chicken fajitas will quickly become a favorite.
Why is everyone into sheet pan meals?
I guess the question is… why not?! They are beyond easy to prepare. I think next to crock pot meals, sheet pan meals are the easiest ones to prepare, especially on busy nights. Simply throw everything onto the sheet pan, and bake. Everything cooks at the same time, and sheet pan meals are so versatile. One of my go-to sheet pan meals is my Sheet Pan Sausage, Peppers and Onions. It’s a fool-proof recipe, and is a crowd-pleaser. I also love my Healthy Sheet Pan Teriyaki Chicken and Vegetables , Sheet Pan BBQ Chicken and Vegetables , Healthy Greek Sheet Pan Chicken and Vegetables and Sheet Pan Italian Chicken and Vegetables. Any of these sheet pan meals would make an excellent easy dinner, or perfect meal prep for the week.
I also love sheet pan meals for those nights when you just don’t feel like standing at the stove. Once you throw this pan into the oven, you’re done. The cleanup couldn’t be easier, too. Here, I use parchment paper on top of the sheet pan to make cleanup even easier. There’s nothing worse than finishing a delicious dinner, just to turn around and see a sink full of pots and pans. Here, it’s one and done… one sheet pan to wash, and that’s it!
Aside from some chopping, there is not much work involved here. You can easily prep lunch for the week in 45 minutes (including chopping and cooking) without standing at the stove.
What you’ll need to make this recipe

For the Spice Blend:
- chili powder
- kosher salt
- coconut sugar
- you can substitute brown sugar
- onion powder
- garlic powder
- cumin
- paprika
- dried oregano
How to make Easy Healthy Sheet Pan Chicken Fajitas
To make this recipe, start by preheating the oven to 450F and lay a sheet of parchment paper on a baking pan. While the oven is preheating, you will combine all of the spice blend ingredients and set to the side. Next, thinly slice the bell peppers and onions. After they are sliced, arrange them on the sheet pan and spray with olive oil spray. Sprinkle the peppers and onions with 2 tablespoons of the spice blend and toss to combine. Once the oven is preheated, roast for 20 minutes.
While the peppers and onions are roasting, cut the chicken into small chunks or strips, whichever cut you prefer. Next, place the chicken pieces in a bowl, and season with the remaining seasoning blend. Squeeze the juice of one lime over the chicken and spices and toss to combine.
After roasting the vegetables for 20 minutes, remove them from the oven and arrange the seasoned chicken pieces on top of the vegetables. Return to the oven and cook for another 20 minutes. After 20 minutes, optionally broil for 1-2 minutes for extra color.
Garnish the fajitas with cilantro and another squeeze of fresh lime juice.
How to serve these sheet pan fajitas
You can serve these fajitas the traditional way by putting them in tortillas with some shredded lettuce, cheese and salsa. Two of my favorite tortillas are these Mission Street Taco size Carb Balance or Mission Extra Thin Corn Tortillas. Just remember that the tortillas are not included in the macro or WW points total. You will need to add those into your calculation.
If you don’t want to use the tortillas, you could eat the chicken and vegetables over rice as a bowl or over lettuce as a salad.
Easy Healthy Sheet Pan Chicken Fajitas

Ingredients
- 4 bell peppers
- 2 onion, medium
- 2 lbs chicken breast
- olive oil spray
- 2 tbsp cilantro, fresh
- 2 limes
Spice Blend
- 1 tbsp chili powder
- 1½ tsp kosher salt
- 1 tsp coconut sugar , (or brown sugar)
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp cumin
- 1 tsp paprika
- ½ tsp dried oregano
Instructions
- Preheat oven to 450℉. Combine the spice blend ingredients.
