4bell peppers

Spice Blend
1tbspchili powder
1½tspkosher salt
1tspcoconut sugar (or brown sugar)
1tsponion powder
1tspgarlic powder
1tspcumin
1tsppaprika
½tspdried oregano
Instructions
Preheat oven to 450℉. Combine the spice blend ingredients.
Thinly slice the bell peppers and onions. Lay a sheet of parchment paper on a baking sheet.
Arrange the peppers and onions on the sheet pan, and spray with olive oil spray. Season with 2 tbsp of the spice blend. Toss to combine.
Roast for 20 minutes.
While the peppers and onions roast, cut the chicken into small chunks or strips (whichever you prefer).
Place the chicken pieces in a bowl, and season with the remaining seasoning blend. Squeeze the juice of one lime over the chicken and spices and toss to combine.
Remove the vegetables from the oven after 20 minutes, and arrange the seasoned chicken pieces on top of the vegetables.
Return to the oven and cook for another 20 minutes. After 20 minutes, optionally broil for 1-2 minutes for extra color.
Garnish with the cilantro and another squeeze of fresh lime juice.
