Your favorite appetizer turned into… breakfast? Yep, you heard that right. This lightened-up spinach artichoke egg bake is out of this world. Dangerously cheesy, packed with vegetables and protein, it’s hard to believe that this recipe is lightened-up. This egg bake tastes like spinach dip you would order at your favorite restaurant, with a breakfast twist: eggs and egg whites are combined with cottage cheese to make this dish delicious and filling. What you’ll need to make this lightened-up spinach and artichoke egg bake
- onion
- garlic
- olive oil spray
- fresh spinach
- canned artichokes packed in water
- Italian seasoning
- kosher salt
- fresh basil
- fat free mozzarella
- You can use full fat mozzarella here, or reduced fat. I like using fat free cheese here to reduce the calories for the recipe; however you can use your preferred brand and preference. I find that using fat free cheese in recipes like this boosts the protein, and it melts easily as opposed to using fat free cheese in other ways.

Egg bakes make the best meal prep
Egg bakes make for the easiest and best meal prep because they are healthy, protein packed, and easy to make. They also are beyond easy to pack up and reheat during the week! Simply microwave, air fry, or place the egg bake portions in the toaster oven or oven for a quick reheat. You can’t go wrong!
Serve an egg bake alongside toast, your favorite breakfast sausage or bacon, or even a side salad if you want to serve it for brunch.

How to make this easy egg bake
This recipe is very easy throw together, making it perfect for meal prep. Start out by chopping the onion and sautéing it in olive oil spray for about 5 minutes. Next, mince the garlic and add that in for another minute. Finally, add the fresh spinach and cover the pan until the spinach is wilted. Once wilted, chop the drained artichoke hearts and add them in. Season with the Italian seasoning, salt, and fresh basil, and set aside.
Layer the cooked onion, spinach and artichoke mixture in the bottom of a casserole dish. Top with the mozzarella and parmesan. Spray the sides of the casserole dish with non-stick cooking spray. In the meantime, add the eggs, egg whites, and cottage cheese to a mixing bowl and whisk to combine. Pour the egg mixture over the sauteed vegetable layer. Top with the remaining mozzarella cheese. Bake at 350F for 40 minutes. Once cooled, cut into four generous servings.
Lightened-Up Spinach Artichoke Egg Bake

Ingredients
- 1 onion, chopped
- 3 cloves garlic, minced
- olive oil spray
- 9 oz spinach, fresh
- 14 oz artichoke hearts, canned, packed in water, drained
- 1/2 tsp Italian seasoning
- 1/2 tsp kosher salt
- 2 tbsp basil, fresh, chopped
- 1.5 cup fat free mozzarella cheese, divided
- 1/4 cup parmesan cheese
- 4 eggs
- 1 cup liquid egg whites
- 1/2 cup reduced fat cottage cheese
Instructions
- Preheat the oven to 350F.
- Chop the onion and mince the garlic.
- Preheat the frying pan over medium heat, and add olive oil spray.
- Add the chopped onion and cook for 5 minutes. Add the minced garlic and cook for 1 more minute or until just fragrant.
- Add the spinach leaves to the frying pan. Cover with a lid to wilt. Cook until the spinach is fully wilted, uncovering and tossing frequently.
- Once wilted, drain and chop the artichoke hearts (get out as much water as possible) and add them to the frying pan.
- Season with the Italian seasoning, kosher salt, and chopped fresh basil. Stir to combine.
- Layer the mixture in the base of the casserole dish, draining all excess water.
- Top with 1 cup of the mozzarella, and the 1/4 cup of parmesan cheese.
- Combine the eggs, egg whites and cottage cheese in a bowl and whisk thoroughly.
- Pour the egg mixture on top of the vegetables, and top with the remaining mozzarella cheese.
- Bake for 40 minutes or until set up.
