How to make this easy skillet chicken dish
This skillet chicken dish comes together in under 30 minutes. Start off by preparing the chicken tenderloins. The tenderloins include a white tendon that runs down the center of the chicken tender, which needs to be removed. I do this by using a fork; I place the white tendon in between the spokes of the fork, and then pull the tendon out using a paper towel for grip. This removes the tendon and also separates the tender at times into two smaller tenders.
Next, combine the spices in a small bowl to form the spice blend. Season the chicken on all sides with the spice blend to coat. In the meantime, preheat a frying pan over medium high heat and add olive oil spray to coat. Cook the chicken for a few minutes on either side, or until a golden brown crust forms on either side and the chicken is cooked through in the middle to 165F. I recommend using a meat thermometer to ensure it is cooked through. Depending on the thickness of the chicken, this can vary in time.
Once the chicken tenders are cooked through, set aside on a plate to rest and finish with the juice of one lime.

For gluten free: I recommend using corn tortillas. Otherwise, flour tortillas work well here!

Ingredients
- 1.5 lbs chicken breast tenderloins, tendon removed
- 1.5 tbsp chili powder
- 1.5 tsp cumin
- 1.5 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp oregano
- 1 tsp kosher salt
- 1 lime, juiced
Instructions
- Prepare the chicken tenderloins by removing the white tendon from each tender (see body of blog post for detailed instructions for how to do this easily).
- In a small bowl, combine the spice blend (the chili powder, cumin, paprika, garlic powder, onion powder, oregano, and kosher salt).
- Season the chicken breast tenderloins on all sides with the spice blend to coat thoroughly.
- Preheat a frying pan or skillet over medium high heat, and spray with olive oil spray.
- Cook the chicken on both sides over medium high heat for several minutes, or until a golden brown crust forms and the chicken is cooked through to 165F internally.
- Set the cooked chicken aside and finish with the juice of one lime.
