Crockpot Salsa Chicken is the answer when you don’t know what to make for lunch, dinner, or meal prep. This meal makes a huge batch of delicious, flavorful, easy to shred chicken, ideal for making tacos, burritos, quesadillas, or even topping a salad. Chicken breast is seasoned with taco seasoning, and then slow cooked in a mixture of salsa, lime juice and fresh cilantro. It couldn’t be easier to prepare this meal; in under 5 minutes, you can prepare these ingredients, set the crockpot, and be on your way.
What you’ll need to make crockpot salsa chicken
This might be the shortest ingredient list in history:
- chicken breast
- taco seasoning
- jarred salsa
- lime juice
- fresh cilantro
For the salsa, I like to use Tostitos. Not only is it super easy to find and readily available basically anywhere, but it tastes great. The other thing I love about this salsa is that there is no added sugar. Make sure to check your salsa labels for this. If salsa has sugar in it, it will not be zero WW points. To keep it easy, just try and find the Tostitos one! For the lime juice, you can use fresh or from the bottle. I always have bottles of lemon and lime juice in my fridge to use for recipes like this. And for the taco seasoning, try and find a reduced sodium one; these taco seasonings can be packed with sodium, so if that’s something you are trying to monitor, just be aware.
How to make crockpot salsa chicken
This is so easy. Simply season the chicken breast on both sides with the taco seasoning, and place the chicken breast on the bottom of your slow cooker. Next, just add the salsa, lime juice, and cilantro. Stir everything up to ensure that your chicken is evenly coated and submerged in the liquid. Then, turn the crockpot on HIGH for 4 hours, or LOW for 8 hours. Now, go do something else!
Shredding and serving the chicken
Once the chicken is fully cooked, it shreds up so nicely with really minimal effort. After you shred it, make sure to coat it with the residual juices in the crockpot, so that it really absorbs all of that good flavor. To serve, the options are endless. I like serving mine in corn tortillas. I use the Mission brand extra thin corn tortillas, and I crisp them up in a pan with some cooking spray and salt for a little more flavor and crunch.
My favorite way to serve my tacos is with some sour cream, shredded cheese and shredded lettuce. I have also eaten this salsa chicken in a bowl with rice, and I’ve used it inside of burritos and quesadillas.
For meal prep
You can use the recipe card below to adjust how many servings you would like to make. When I meal prep this recipe, I make 6 servings to last me throughout the week. I pack it up in my meal prep containers with some cauliflower rice, peppers and onions. My condiments and tortillas get packed up on the side. When I meal prep this recipe, I actually cook the chicken overnight in my crockpot. When I wake up in the morning, the chicken is done, and all I need to do is shred it and assemble my containers. I love this recipe for meal prep, especially on the weeks where I am really in a time crunch.

Equipment
- slow cooker or crockpot
Ingredients
- 2 lbs chicken breast
- 15 oz salsa, I use Tostitos
- 2 tsp taco seasoning
- 2 tablespoons fresh cilantro
- 2 tablespoons lime juice
Instructions
- Season the chicken breasts on all sides with taco seasoning and rub to coat.
- Place the chicken in the bottom of your slow cooker.
- Pour in the jar of salsa, and the cilantro and lime juice.
- Cook on LOW for 8 hours or HIGH for 4 hours.
- Once done, shred the chicken and taste for seasoning.

I always add a 4 oz can of diced green chilies and it’s still 0 points for blue. You can’t go wrong with this recipe! My mother in law actually had something very similar so I don’t feel like I’m depriving myself!

Tried this last night and it was SO SO good! I combined everything together Monday night and left it in the fridge to marinate, then threw it in the crockpot Tuesday morning before work. The house smelled so good when I got home, I just couldn’t wait to dig in! There were enough leftovers for my boyfriend and I to both have it again for lunch today.
