How to make these copycat bacon gruyere egg bites
Start by preheating the oven to 325F. In the blender combine the eggs, cottage cheese, hot sauce and salt and pepper.
Copycat Bacon Gruyere Egg Bites
Equipment
- blender
- muffin pan or silicon muffin liners
- large baking dish
Ingredients
- 6 eggs
- 1 cup reduced fat cottage cheese, used: 2% reduced fat
- 1-3 dashes hot sauce, used: Franks Red Hot
- pinch kosher salt and fresh cracked pepper
- 6 slices pre-cooked bacon
- 3 oz gruyere cheese, shredded
Instructions
- Preheat the oven to 325F.
- Microwave the precooked bacon until crispy.
- Shred 3 oz of the cheese.
- In a blender, add the eggs, cottage cheese, salt, pepper, and hot sauce.
- Blend until thoroughly combined and creamy.
- Spray a muffin pan (or silicon muffin liners) with non-stick cooking spray. Fill each muffin opening with equal amounts of the egg mixture.
- Crumble the bacon and add 1/2 slice of crumbled bacon to each muffin tin opening/liner.
- Add equal amounts of the shredded cheese to each muffin tin opening/liner.
- Place the muffin pan/liners in a larger baking dish, and then pour water around the muffin pan/liners until halfway up the sides.
- Bake for 30 minutes, then remove from the water bath and allow them to cool.

so so so delicious!!!! thought i had cottage cheese but i didnt so used greek yogurt instead and still so yummy. used up a package of bacon and only had 4 slices left but was still plenty. also used 8 eggs and 1 oz of gruyere cheese and they were still so flavorful and perfect! excited to use cottage cheese next time lol

I’ve made many egg bite recipes, and these are my new favorite! They are creamy and SILKY! I only used 3 slices of bacon, diced really small, and that was enough for me. The Gruyère adds such a rich yummy taste, I was glad I didn’t substitute something else. I can’t wait to have them for breakfast again tomorrow!

These are delicious, a great dupe for Starbucks. Delicious. However, my turned out a bit watery when reheating. No water got into the pan during/after cooking. Very odd. Still great flavor and texture, just watery. Any ideas what I need to adjust?

These are delicious! I have had these from Starbucks and bought the Starbucks ones at Costco and these are just as good if not better. I used Canadian bacon and added some peppers and will definitely make again.

We had the Starbucks ones yesterday so I knew I had to make these immediately. I made them this morning and they turned out perfect 🤩 my whole family enjoyed them. This recipe is delicious! My favorite egg bites from Starbucks are the roasted red pepper ones so I looked up the ingredients for those and threw the spinach in the blender with the eggs and cottage cheese and then put roasted red peppers and grated monterey jack cheese in the bites. They turned out amazing and taste just like the Starbucks ones! They look a little like grinch egg bites because of the spinach, but I suppose you could avoid that by just putting the spinach in after you use the blender. Either way they tasted perfect!
