Ingredients
- 1 cup pancake mix
- Note: to make this lower calorie and lower point use a high protein mix such as Kodiak Cakes
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- splash of vanilla extract
- 1 egg
- 1 cup of unsweetened almond or cashew milk can substitute skim
Instructions
- Combine all ingredients and pour into a 8-10”baking dish or pie plate that has been sprayed with cooking spray (coconut spray works well here).
- Bake at 350 for about 25 minutes or until a toothpick comes out clean. Cut into four servings.

This was a hit with my family ( kids are 7,5 and 1.5). I doubled the recipe and baked in an 11×17 for about 23 minutes. Also added sprinkles to the kid side. I’ve been looking for a easy breakfast options to send to daycare with the toddler and I think this might now be a go to meal prep for both of us. Thanks!
