Having 3 kids and working full-time, I knew whatever I did on my health journey had to be practical and sustainable. Enter: meal prepping. I started dedicating time on Sundays to be for meal prepping for the week. Eventually it became a habit. By having my meals prepped for the week, I had no excuse to go to the drive-thru line or waste calories on a dry, processed protein bar.
I needed my meals to be easy and lightened-up too. Spending hours in the kitchen or making grocery lists wasn’t appealing or possible for me. Which is why I lean heavily on chicken in my recipes. Chicken is cheap and can be bought raw, in a can, or already cooked as a rotisserie chicken. Chicken also works with lots of flavors! It’s also low calorie which allowed me to be more generous with other ingredients.
Meal prepping lunch doesn’t have to be repetitive or time consuming, and chicken doesn’t need to be boring. Below are 5 chicken recipes I’ve created that I created, and that I make when I’m wanting an easy meal prep for the week that’s healthy and delicious.
