- I use these Mission brand extra thin corn tortillas.
- reduced fat Mexican cheese blend
- olive oil pray

How to make these tacos
Preheat the oven to 450F. Wrap the corn tortillas in a damp paper towel and microwave for about 30 seconds to 1 minute to soften and make them pliable. Do not skip this step, otherwise the tortillas might tear during the filling process.
In a large frying pan, add the olive oil spray, diced onion, and ground beef. Break apart with a wooden spoon and cook over medium high heat until no longer pink. Combine the spices to form the spice blend, and then season the ground beef. Stir to combine thoroughly and then add the water to the pan, allowing the beef to simmer. Simmer the beef for about 10 minutes or until most of the liquid has evaporated and the meat is moist.
Spray the baking sheet with olive oil spray and then arrange the tortillas on the baking sheet. Sprinkle 2 tablespoons of the cheese on each tortilla, and then add a heaping 1/4 cup-1/3 cup of the meat filling to each tortilla. Close the tortillas and press firmly to secure. Spray the tops of the tortillas with olive oil spray and a pinch of kosher salt, then lay the baking dish or cast iron on top of the tortillas to secure them in place for baking.
Bake at 450 F for 10 minutes or until the tortillas are crispy and the cheese has melted, flipping halfway as needed.
