My favorite kind of meal: one pot! There are so many benefits to making one pot meals, the first is the ease of cooking and cleanup. One pot means less dishes to wash, but it also means that the flavors of the dish build on each other in one vessel, creating a super flavorful and delicious recipe. This one pot skinny lemon shrimp and orzo is exceptionally easy to make; done in under 30 minutes, this recipe includes flavorful shrimp, tender creamy orzo, and bursts of flavor. It’s hard to believe this is so easy to make, but it will become a go-to weeknight recipe in your house hold, rest assured!

With just a handful of ingredients, you can make this delicious and easy recipe. It is bursting with flavor, even though it is so easy to make!
- jumbo shrimp
- kosher salt and pepper
- Italian seasoning
- olive oil spray
- shallots
- garlic
- white wine
- lemon
- vegetable broth
- orzo
- orzo looks like rice, but is actually pasta
- fresh parsley
How to make this one pot orzo and shrimp dish
Start out by seasoning the shrimp with salt, pepper and Italian seasoning. Toss to coat. In the meantime, preheat a large skillet or shallow Dutch oven over medium high heat, and add olive oil spray.
Sear the shrimp on all sides until no longer opaque, and cooked through. Remove the shrimp from the pan and set aside. Slice the shallots, and mince the garlic. To the same skillet, add more olive oil spray and add the sliced shallots. Saute for five minutes, or until tender and slightly caramelized, then add the garlic to the skillet and saute for 1-2 additional minutes, or until just fragrant. Add the dry orzo to the pot, and toss to coat with the other ingredients for a few minutes; this allows the orzo to become toasted and gives it more flavor. Next, add the zest of the lemon, the juice of the lemon, and the white wine, and deglaze the pan. Scrape any burnt bits from the bottom of the skillet using a wooden spoon. Next, add the broth and bring the liquid to a boil. Once boiling, cover the pot and reduce to simmer.
Cook the orzo for about 15 minutes or until tender and cooked through, and add the shrimp back to the pot. Toss to combine, garnish with fresh parsley, and taste for seasoning.

- 1/2 cup white wine, dry
- 2.5 cups vegetable broth

Instructions
- Clean and devein the shrimp.
- Slice the shallots, and mince the garlic.
- Toss with the Italian seasoning, salt, and pepper.
- Preheat a skillet or Dutch oven over medium high heat, and add olive oil spray.
- Sear the shrimp on all sides, or until cooked through, firm, and no longer opaque.
- Remove the shrimp from the pan once cooked and set aside.
- To the same pan, add more olive oil spray, and add the sliced shallots.
- Cook the shallots for about 5 minutes, or until tender and slightly caramelized. Then, add the minced garlic.
- Cook the garlic for 1-2 minutes or until just fragrant.
- Next, add the raw orzo, and toss to combine with the other ingredients (this gives it a toasty flavor before it cooks).
- Cook the orzo for 2 minutes or until just slightly toasted. Next, add the zest and juice of the lemon.
- Add the white wine to the pot, and using a wooden spoon, scrape any burnt bits from the bottom of the pot (the acid from the lemon, and the alcohol will help this along).
- Next, add the broth to the pot and stir to combine. Bring the liquid to a boil.
- Once boiling, cover with a lid and reduce to simmer.
- Cook the orzo for about 15 minutes or until tender and cooked fully.
- Add the shrimp back into the orzo once the orzo is cooked; garnish with parsley and taste for seasoning.

I scaled back and made a 2 serving portion. Somehow I ended up with a lot of liquid at the end… maybe need to reduce the broth more when the serving is smaller? Took off the lid and turned up the heat to let it cook down since orzo was still a little Al dente. Cooked for 20 min.

Delicious and simple to make. There was liquid left after 15 minutes. Cooked 5 minutes longer and that turned out better.
Think I will decrease broth next time.

This was so easy and delicious! I made it this week for dinner and can not get over how good the leftovers taste.
