Ingredients
16ozreduced fat cottage cheeseused: Good Culture 2%
1tbspolive oil
½lemonzested and juiced
1tspdried chives
1tsponion powder
2clovesgarlicgrated
¼-½tspkosher saltto taste
2tbspdill fresh
fresh cracked pepper
Instructions
Add the cottage cheese to a blender or food processor and emulsify until the curds are broken down and the cheese is silky smooth.
Add the olive oil, chives, onion powder, salt (start with ¼ tsp) and pepper.
Zest and juice ½ of a lemon into the mixture.
Grate the garlic using a microplane.
Stir all ingredients to combine and taste for seasoning, add more salt if desired. Fold in the dill.
