Change up your usual breakfast with this quick and easy salsa verde egg skillet. This recipe uses just a handful of ingredients, but packs a punch! If you like making eggs on the stove top, this is a way to add more flavor without much effort, and with minimal ingredients. Simply simmer whole eggs in a skillet with garlic and salsa verde; and that's it! My favorite way to serve this recipe is with corn tortillas.

Ingredients
olive oil spray
2clovesgarlicminced
1cupsalsa verdeused: 365 Brand
4eggs
kosher salt
fresh cracked pepper
2tbspcilantrofresh
Instructions
Finely mince the garlic.
Add olive oil spray to the skillet, and add the minced garlic.
Turn the heat on to medium.
Saute the garlic for 1-2 minutes or until fragrant.
Add the salsa to the skillet.
Simmer for 1-2 minutes, then crack four eggs into the skillet.
Increase the heat to medium high.
Place the lid on the skillet, and allow the eggs to cook through to your desire (my preference is over medium).
Season with salt and pepper to taste; garnish with fresh cilantro.
