16ozroasted red peppersjar, packed in water, drained
½tspkosher saltor more to taste
2tbspfresh basil
fresh cracked pepper
olive oil spray
Instructions
Spray a small frying pan with olive oil spray.
Mince the shallots and garlic.
Add the shallots to the pan and cook them at medium high heat for about 5 minutes or until soft and translucent.
Add the minced garlic and saute for 1 minute or until just fragrant.
Add the cooked shallots and garlic to a food processor along with the drained roasted red peppers and basil and puree until a smooth puree forms.
Stir in salt and pepper to taste.
Simmer in a saucepan to heat through before serving, if desired.
