Chicken Milanese represents all of the things I love, rolled into one cohesive dish. Air fried chicken cutlets, topped with a delicious salad of cherry tomatoes, red onion, fresh mozzarella, basil and balsamic vinegar. Topped with a drizzle of sweet balsamic glaze, each bite is the perfect combination of sweet and savory.

Ingredients
1.5lbschicken breastthin sliced, 6 pieces
1/4cupegg whites
3/4cupItalian seasoned breadcrumbs
olive oil spray
10ozcherry tomatoeshalved
½cupred oniondiced
2ozfresh mozzarellachopped
¼cupfresh basilchopped
1tablespoonbalsamic vinegar
1/2tspkosher salt
fresh cracked pepper
2cupsarugula
1tablespoonbalsamic glaze
Instructions
Make the air fried chicken cutlets (see link in the text for the recipe).
Arrange the arugula on a platter.
Top with the chicken cutlets.
Half the tomatoes, dice the onions, chop the basil and mozzarella. Add them all to a small bowl, along with the kosher salt and balsamic vinegar. Stir to combine.
Pour the tomato mixture on top of the chicken cutlets.
Drizzle with balsamic glaze.
