This easy One Pot Chicken and Spinach Orzo is the perfect weeknight dinner! Tender chicken, creamy orzo and fresh spinach come together in one pot for a flavorful meal that's perfect for a busy weeknight. The orzo cooks right in the same pot, soaking up all the delicious flavors as it cooks. The best part is there is only one pan to clean up!

Ingredients
1½lbchicken breastraw, cut into bite sized pieces
½tspkosher salt
1tspgarlic powder
1tsponion powder
1tsppaprika
olive oil spray
1onionchopped

1corzouncooked
2½cchicken broth
¼cgarlic and herb spreadable cheeseused: Boursin
10ozfrozen spinachone package; thawed, drained of all excess water
½cparmesan cheesegrated
Instructions
Cut the chicken into bite-sized pieces. Add to a bowl and season with the salt, garlic powder, onion powder, and paprika. Toss to coat.
Spray the frying pan with nonstick cooking spray.
Cook the chicken over medium high heat until golden brown on the outside, and mostly cooked on the inside (it will continue to cook later).
Remove the chicken from the pan, and set aside.
In the meantime, chop the onion and mince the garlic.
Add more olive oil spray to the pan, and add the onion. Sauté the onion over medium high heat for about 5 minutes or until tender and slightly translucent.
Add the minced garlic and cook for 1 minute. Add the tomato paste and stir to combine, followed by the dry orzo. Toss the orzo around to slightly toast on the bottom of the pan.
Add the chicken broth and bring the pot to a rolling boil. Add the partially cooked chicken back into the pot, cover, and reduce the heat to medium.
Cook covered for about 10 minutes or until the orzo is cooked, and most of the liquid has been absorbed. Add more broth if necessary.
Defrost and drain the spinach of all excess water.
Add the spinach, garlic and herb cheese, and grated parmesan and stir to combine. Taste for seasoning. Serve immediately.
