Lower Calorie Broccoli Cheddar Stuffed Chicken Breast

Ingredients
1lbchicken breastboneless skinless
1tspgarlic powder
1tsponion powder
1tsppaprika
1tspkosher salt
1/2cupbroccolisteamed, chopped
1/4 cup reduced fat cream cheeseused: Philadelphia 1/3 fat
1/4cupfat free cheddar cheeseused: craft
olive oil spray
kosher salt and pepper
1cupchicken broth
Instructions
Preheat the oven to 375F.
Cut a slit into the chicken breasts horizontally, but not fully through; just enough to create a pocket on the inside of the chicken breast.
Combine the garlic powder, onion powder, paprika, and salt in a small bowl and season the chicken on all sides with the spice blend.
Steam the broccoli (I use a microwavable pouch to make this easier).
In a small bowl, combine the cream cheese, cheddar cheese, and steamed broccoli. Mash the broccoli up slightly to mix with the cheese. Season with a pinch of salt and pepper.
Add half of the mixture to the inside of each chicken breast.
Add olive oil spray to a cast iron skillet or oven proof skillet over medium high heat.
Sear the chicken on all sides until a golden brown crust forms (it will not be cooked through).
Add the broth to the skillet, and place the skillet in the oven for 30 minutes or until the chicken is cooked through (165F internal temperature).
