Air Fried Cod
1.5lbscod filletfresh, cut into about 24 bite sized pieces
1packettaco seasoning
1limejuiced
Avocado Crema
2ozavocado
3tbspplain nonfat Greek yogurt
1/2limejuiced
2tbspwater
2tbspcilantrofresh
1/2tspsalt
1/2tspchili lime seasoning (or similar)
Pico De Gallo
4plum tomatoeschopped
1onionminced
1limejuiced
1/4 ccilantrochopped
1/2tspkosher salt
Additional
low carb flour or corn tortillas
2cpurple shredded cabbage
Instructions
Air Fried Cod
Cut the cod into approximately 24 bite sized pieces.
Toss with taco seasoning and lime juice.
Spray airfryer basket with nonstick spray. Place cod in the basket.
Airfry at 400F for 10-15 minutes or until cooked through; check often and shake basket occasionally to prevent sticking.
Avocado Crema
Put all ingredients into a blender and blend until smooth; yields 1/2 cup sauce.
Pico De Gallo
Finely dice the tomato and onion.
Chop the cilantro.
Juice the lime.
In a small mixing bowl combine tomatoes, onion, cilantro, salt and lime juice.
Assembly
Lay the shredded cabbage at the base of the tortillas, top with the air fried cod, pico de gallo, and finally the avocado crema.
