Ingredients
1.5lbschicken breastsliced into four pieces
1/4cupteriyaki marinadeUsed: Very Very Teriyaki. Note: the macros and points are calculated using 1 tbsp of the marinade, since so much is leftover in the bag after removing the chicken, and so much cooks off.
2cucumbers
1tbspreduced-sodium soy sauce
1tbsprice wine vinegar
1tbspsesame oil
2scallionschopped
1tspsesame seeds
2bagsTrader Joe's Riced Cauliflower Stirfryfound in the frozen section
16Trader Joe's Mini Chicken Cilantro wontonsfound in the frozen section
1/4cupTrader Joe's Gyoza Sauceoptional, for dipping
Instructions
Thinly slice the chicken breasts into four pieces and marinate it in the Teriyaki marinade overnight (if possible) or for as long as possible before grilling.
Grill the chicken breast for about 5 minutes per side, or until cooked through.
Add the frozen cauliflower stirfry to a frying pan, and cook until the water is evaporated and the rice begins to become crispy and golden (about 10 minutes).
Peel the cucumbers and cut then lengthwise into pieces.
Combine the soy sauce, rice wine vinegar, and sesame oil.
Pour the mixture over the cucumbers and toss.
Chop the scallions and sprinkle them onto the cucumbers, along with the sesame seeds.
Chop the chicken into pieces.
The wontons do not need to be cooked, just heated through before eating.
Assemble the box as follows: 1 piece of chicken, 1 cup of rice, 4 wontons. Keep the cucumber salad in a separate container. Keep the dipping sauce to the side (1 tablespoon per box).
