Ingredients
1box Goya Spanish-Style Yellow Rice
2.25cupswater
2lbschicken breast
3bell peppers
2onions
1tspgarlic powder
1tsponion powder
1tsp cumin
1tsp oregano
1tsppaprika
1tspkosher salt
1/4tspcayenne pepper
1/4cupcilantrofresh, chopped
Instructions
Preheat the oven to 375F.
Pour the contents of the rice package into the baking dish.
Pour the water over the rice, and stir to combine.
Thinly slice the peppers and onions.
Slice the chicken breast into pieces (each full chicken breast should be sliced into approximately 4 pieces).
Add the peppers, onions, and chicken to a large mixing bowl.
Combine all of the spices in a small bowl, and then sprinkle the seasoning over the chicken, peppers and onions.
Toss the spices together with the chicken, peppers and onions using your hands.
Pour the seasoned chicken, peppers and onions on top of the rice.
Cover the baking dish with foil.
Cook for 1 hour.
After one hour, remove the foil and toss in the fresh cilantro.
