These healthy key lime parfaits make a delicious snack or dessert when the warmer months hit and you are craving something sweet. The parfaits start out with a graham cracker crumble at the base, and then are layered with a delicious combination of vanilla yogurt, whipped topping, key lime juice, lime zest and vanilla extract. Topped with a bit of shredded coconut, these parfaits have a bright, vibrant and sweet taste all in one. 6 glasses or mason jars for presentation and storage
Ingredients
3ozgraham cracker crumbs
2tbsplight butterUsed: I Can't Believe It's Not Butter (Light)
8ozfat free whipped toppingUsed: one 8 oz container of fat free cool whip
10ozvanilla Greek yogurtUsed: two 5.3 ounce containers of Fage Vanilla
1/4cupkey lime juicenote: this is not the same as lime juice.
1tspvanilla extract
2limeszested
3tbspcoconut flakes
Instructions
Melt the butter in a small bowl.
Combine the graham cracker crumbs with the melted butter to form the graham cracker "crust" layer (it should resemble wet sand).
Put an equal amount of the graham cracker crust at the bottom of each glass.
In a large bowl, combine the yogurt, whipped topping, the zest of one lime, the key lime juice, and the vanilla extract.
Stir to incorporate the ingredients well.
Add equal amounts of the mixture to each glass.
Garnish with the shredded coconut and the remaining lime zest.
