Apple Pie Overnight Oats are one of my favorite breakfasts. Old fashioned oats are spiced with all the flavors you'd find in apple pie, then topped with ooey-gooey apple pie filling and sweet, creamy yogurt. This delicious breakfast is built in individual mason jars, stored in the fridge, and are perfect for an easy grab-and-go breakfast on busy mornings (plus, mason jars fit perfectly in cup holders in the car!) Make this recipe once, and have breakfast for the week.

mason jars or other storage containers for 6 servings
Apple Pie Filling
4cupsapplespeeled, diced, approximately 3-4 apples
2cupsold fashioned oatsor quick-cooking
3cupsunsweetened cashew milkor almond milk, or skim milk
3tspapple cinnamon Tasty Shake Mixin'syou can omit this, or sub in a different flavoring of choice, such as Maple Syrup
3cupsplain non-fat Greek yogurt
Apple pie filling
Peel, core, and dice the apples.
Add the diced apples to a large frying pan with the cinnamon, sugar, vanilla, corn starch, nutmeg, cloves, and salt.
Stir to coat the apples with the spices, and then add the water.
Cook the apple mixture for 10 minutes, stirring frequently.
The apples should be tender, but still have a bite. The sauce should thicken, similar to apple pie filling.
Remove from the heat and set aside to cool.
To each mason jar or serving container, add 1/3 cup of oats, 1/2 cup of milk, 1/4 tsp cinnamon and 1/2 tsp of the Tasty Shakes mixin's (or flavoring of your choice).
Stir to combine.
Yogurt Layer and Assembly
Add 1/4 cup of the cooked apples on top of the Oatmeal Layer of each jar.
In a large bowl, combine the yogurt with the cinnamon and cinnamon sugar.
Add 1/2 cup of the yogurt mixture to each mason jar.
Add another 1/4 cup of the apple filling on top of the yogurt layer in each jar.
