12ozsweet potatoespeeled and diced into small pieces; about 1 large sweet potato or two smaller ones
1cupred oniondiced
10slicesCanadian bacondiced
1/2tsppaprika
1/2tsponion powder
1/2tspgarlic powder
1/2tspdried thyme
1/2tspcinnamon
1tspkosher salt

Instructions
Preheat the oven to 400F.
Peel and dice the sweet potatoes.
Dice the red onion and the Canadian bacon.
Add the diced sweet potatoes, red onion and Canadian bacon to a casserole dish or baking dish.
Add olive oil spray to the dish.
Add the paprika, onion powder, garlic powder, thyme, cinnamon, salt and pepper to the dish and toss it combine.
Roast for 45 minutes; toss the mixture at the 20 minute mark to prevent sticking or burning.
