Ingredients
2chicken breastscooked, shredded (I use rotisserie chicken)
2cupscherry tomatoeshalved
1cupcucumberseeded, chopped
1cupred onionchopped
2tbspmintfresh
2tbspparsleyfresh

1/2cupplain non fat Greek yogurt
1/2cuplight mayo
1lemonzested and juiced
1tbspred wine vinegar
1/2tspkosher salt
1/2tspdried oregano
1tspgarlic powder
1/2tsponion powder
1tsppaprika
1tspdried dill
1/4tspnutmeg
1/2cupfat free feta cheese
2ozkalamata olivespitted
Instructions
Half the cherry tomatoes, dice the onion, and peel and half the cucumber.
Remove the seeds from the cucumber using a spoon, and then chop the remaining cucumber.
Chop the kalamata olives.
In a large mixing bowl, combine the yogurt, mayo, zest and juice of the lemon, and vinegar.
Add the salt, oregano, garlic powder, onion powder, paprika, dill, and nutmeg.
Fold in the tomatoes, cucumber, onion, and olives.
Add the cheese, herbs, and cooked chicken breast and stir to combine.
