These parfaits feature oats layered with milk and flavorings, protein-packed yogurt, and sweet frozen berry medley on top. As the parfait sits in the fridge, the flavors combine; the oats soak up the milk and other liquids and "cook" without cooking, the berries melt and release their naturally sweet juices, and together these ingredients form the most delicious and satisfying breakfast. 12 oz mason jar for layering (one per serving)
Ingredients
Oat Layer
1/3cupold fashioned oatsquick-cooking oats work, too
1/3cupunsweetened almond milkor cashew milk, or skim milk
1/4tspcinnamonfor a chocolate flavor, use cocoa powder instead
1/2tspflavoring of choiceI used: Tasty Shake Mixin's Vanilla flavor. You can also use Jello Pudding powder to match the flavor profile you want. You can also use maple or other flavored syrups.
Yogurt Layer
1/2cupplain non-fat Greek yogurt
1/4tspcinnamonfor a chocolate flavor, use cocoa powder instead
1/4tspsugar
Berry Layer
1cupfrozen mixed berry medleyor fruit of choice
Instructions
Oat Layer
Add the oats to the bottom of the mason jar.
Stir in the milk, cinnamon, and flavoring.
Note: if eating right away, at this point you should microwave your oat mixture for about 1 minute 30 seconds until the oats are cooked to your liking. If making "overnight" style, keep uncooked.
Yogurt Layer
Combine the yogurt, cinnamon, and sugar.
Add the yogurt layer on top of the oatmeal layer.
Fruit Layer
Add the frozen berries to the top of the yogurt.
Place the lid on the mason jar and store in the fridge for up to 1 week.
Combine all ingredients before eating, or leave layered.
