4slicescenter cut baconchopped
1cuppancake mixused: Kodiak Cakes Buttermilk
1teaspoonbaking powder
1egg
1cupalmond milkcashew milk or skim milk
1/3cupreduced fat cheddar cheese
1scallionchopped
Instructions
Preheat the oven to 350F.
Chop the bacon and add it to a small frying pan.
Turn the heat to medium, and cook the bacon until crispy and all fat has rendered off, about 10 minutes,
Liberally spray a pie plate or baking dish with cooking spray.
Combine the pancake bake, baking powder, egg, milk, cheese, chopped scallion, the cooked bacon AND the bacon grease from the pan.
Pour the batter into the sprayed baking dish.
Bake for about 25 minutes or until a toothpick comes out clean.
