One of the easiest, hassle-free methods of cooking is roasting everything on a sheet pan. Sheet pan meals are easy to throw together, versatile, and quick to clean up. This sheet pan BBQ chicken and vegetables features flavorful, moist chicken breast, diced sweet potatoes, sweet red onion, and broccolini. Combined with a smoky spice mixture and tangy barbeque sauce, this easy sheet pan meal is anything but boring.

Ingredients
1.5lbchicken breast
4cupssweet potatoespeeled, raw, diced (about 2 medium to large sweet potatoes)
2cupsred oniondiced
1lbbroccolinior broccoli
1tspolive oil
2tbspBBQ sauceI use Stubbs
1tbsphoney
Spice Rub
1tsppaprika
1tsponion powder
1tspgarlic powder
1tspcoriander
1tspkosher salt
1tspbrown sugar
Instructions
Preheat the oven to 425F.
Peel and dice the sweet potatoes.
Line a sheet pan with foil or parchment paper. Spray the foil or parchment paper with olive oil.
Combine the spice mixture ingredients.
Toss the sweet potato in a bowl with the olive oil. Add 1 tbsp of the spice mixture (reserve the rest for the chicken later).
Toss to combine, and then pour the sweet potatoes onto the sheet pan.
Add more olive oil spray on top, and roast the sweet potatoes for 15 minutes.
While the sweet potatoes are cooking, dice the red onion, trim and wash the broccolini, and cut the chicken breast into 8 pieces.
Season the chicken breast with the remaining spice rub; use your hands to massage the rub into the chicken.
After the sweet potatoes have cooked for 15 minutes, remove the sheet pan from the oven. Move the sweet potatoes over to one side of the sheet pan.
Add more olive oil spray to the sheet pan, then add the onion, broccolini, and seasoned chicken to the sheet pan.
Spray olive oil spray on all of the vegetables. Add a pinch of salt to the broccolini and the onions.
Roast for another 15 minutes.
Combine the BBQ sauce with the honey in a small bowl.
Remove the sheet pan from the oven again. Brush the BBQ sauce and honey mixture onto the chicken.
Toss the vegetables. Return the sheet pan to the oven for another 10 minutes.
