These easy chocolate banana muffins have been a go-to in my recipe rotation for three years. Moist chocolate muffins made with just a handful of ingredients; I love having them on hand for a healthy snack, but they also make a really great breakfast.

Ingredients
4bananasoverripe
2eggs
1tspvanilla extract
1 cupDark Chocolate Kodiak Cakes pancake mix
1tspbaking powder
1tablespooncocoa powderunsweetened
Instructions
Preheat the oven to 350F.
Spray a 12-opening muffin pan with cooking spray.
In a large mixing bowl, mash the four overripe bananas with a fork. You can use an electric mixer to get the lumps out, if desired.
Add the eggs and vanilla extract, and whisk together.
Add the pancake mix, the baking powder and the cocoa powder and stir to combine.
Fill each muffin opening with 1/4 cup of the batter.
