Pan Sauce
2shallotsminced
1/2cupchicken broth
1/4cuplime juice
1/2tspkosher salt
Instructions
Combine the honey, lime zest, lime juice, low sodium soy sauce, minced garlic, salt, pepper and cilantro in a mixing bowl.
Cut the chicken breast into bite-sized chunks. Toss in marinade.
Marinate in the fridge, covered for a minimum of 4 hours (all day is fine).
Preheat a cast-iron skillet over medium high heat. Add olive oil spray, and saute the chicken pieces on one side for 5 minutes; flip and reduce the heat to medium to continue cooking for another 10 minutes.
Cook on all sides until golden brown and cooked through (internal temperature should be 165F).
Note: there will be marinade leftover in the bowl; discard.
Remove the chicken from the pan to create the pan sauce.
Mince the shallots. Add more olive oil spray to the pan, and add the shallots to the pan.
Saute for 5 minutes, then deglaze the pan with the chicken broth and lime juice. Add the kosher salt.
Simmer for 5 minutes, stirring frequently. Add the chicken bites back to the pan and toss in the sauce.
