Hello Fall! This Pecan Pie Baked Oatmeal is the perfect recipe to indulge in the classic fall flavors we all know and love. Maple syrup and pecans combine to create and ooey gooey pecan pie-inspired topping. Old fashioned oats are mixed with mashed banana, maple extract, unsweetened applesauce, milk, and spices and baked to perfection. Split into four generous servings, this baked oatmeal keeps great in the fridge and is easy to reheat.

2bananasoverripe
1/4cupunsweetened applesauce
2tbspmaple sugarequivalent to 6 tsp
1tspmaple extract
1/2tspbaking powder
1/4tspkosher salt
1cupcashew milkunsweetened, or almond milk or skim
1.5cupsold fashioned oats
1/4cuppecans
1tbspmaple syrup
Instructions
Preheat the oven to 375F.
Spray a small baking dish or casserole with cooking spray. I used an 8.5" x 11" 2.5qt casserole dish for this.
Add the overripe bananas to the bottom of a mixing bowl, and mash them with a fork.
Add the applesauce, maple extract, baking powder, salt and maple sugar, and stir to combine.
Add the milk. Whisk together.
Add the oats. Fold in.
Pour the mixture evenly into the baking dish.
In a small bowl, combine the maple syrup and pecans. Spread this mixture evenly on top of the oats.
Bake at 375 for 35 minutes.
