Mixed berry chocolate baked oatmeal is the most deliciously sweet breakfast that will leave you wondering: is this breakfast or dessert? Truthfully, it could be either one. This recipe is a healthy but indulgent tasting breakfast, naturally sweetened by fruit with just a bit of added sugar. Serve this delicious oatmeal dish alone, or with a doll-up of yogurt for some extra protein.

Ingredients
2bananasoverripe
1/4cupunsweetened applesauce
2tbspsugarI used Cane Sugar; it is coarser
1tbspunsweetened cocoa powder
1tspvanilla extract
1/2tspbaking powder
1/4tspkosher salt
1cupcashew milkunsweetened, or almond milk or skim
1.5cupsold fashioned oats
Topping
4cupsmixed berriesfrozen
1tspsugar
1tspcorn starch
optional: extra cocoa and powdered sugar for topping
Instructions
Add the frozen berries, corn starch and sugar to a small saucepan.
Cook the berries for 10 minutes on medium heat or until broken down and into a thick jam consistency. Set aside,
Preheat the oven to 375F.
Spray a small baking dish or casserole with cooking spray. I used an 8.5" x 11" 2.5qt casserole dish for this.
Add the bananas to the bottom of a mixing bowl, and mash them with a fork.
Add the applesauce, sugar, cocoa powder, baking powder, salt, and vanilla extract, and stir to combine.
Add the milk. Whisk together.
Add the oats. Fold in.
Pour the mixture evenly into the baking dish.
Pour the cooked berry topping on top of the oatmeal. Spread in an even layer.
Bake at 375 for 35 minutes.
Allow to cool and firm up before cutting into 4 servings.
