Ingredients
1.5lbchicken breastsliced into 4 pieces
1tspgarlic powder
1tspkosher salt
2tablespoonslight butter
¼cupBBQ sauceI use Stubbs
¼cuplow sodium chicken broth
1cupcaramelized onions
4sliceslight Swiss cheeseI used Jarlsberg light Swiss; or use 3/4 cup reduced fat mozzarella
Instructions
Preheat your oven to 400F.
Season the chicken with the salt and garlic powder on both sides.
Melt the butter in an oven proof skillet over medium high heat and add some olive oil spray.
Sear the chicken for 5 minutes on both sides until a golden crust forms.
Mix the BBQ sauce and chicken stock together and pour on top of the chicken.
Bake the chicken at 400 about 15 minutes to finish cooking.
When the chicken comes out of the oven, top with the onions and the cheese.
Turn the broiler on; broil for a couple of minutes until the cheese melts and becomes golden.
