1 3/4cupalmond flour
1egg
1/4cuplight butterused: Land 'o Lakes with Canola Oil
2tbspmaple syrup
1/3cupcane sugar
1/2tspbaking soda
1/2tspcinnamon
1/4tspkosher salt
1tspvanilla extract
1/3cuppecanschopped
non-stick cooking spray
Instructions
Preheat the oven to 350F.
In a mixing bowl, add the egg, butter (softened, not melted), sugar, maple syrup, cinnamon, baking soda, salt, vanilla extract.
Whisk to combine thoroughly.
Add the almond flour to the mixture, combine thoroughly.
Fold in the chopped pecans.
Spray a baking sheet with non-stick spray.
Using a small cookie scoop, form 16 equal-sized balls of dough on the sheet.
Sprinkle each cookie with a pinch more chopped pecans, and a tiny pinch of kosher salt.
Bake for 15 minutes or until golden brown (the cookies will still be soft). For crunchier cookies, bake longer until to your desired texture.
