Poach the chicken in a pot on the stovetop- I flavor my water with salt, peppercorns and whole garlic cloves. You can use any flavorings you have, or even chicken stock. (I place the chicken breast in the pot with the seasonings, fill with the liquid to cover, cover the pot, and bring it to a boil, then reduce to simmer until cooked through).
Chop the chicken into bite size pieces.
Preheat the oven to 400F.
As the chicken cooks, roast the chopped onions on a sheet pan with salt, pepper and cooking spray for 15 minutes.
Combine the mayo, balsamic, yogurt, oregano, basil, garlic powder, onion powder, and pepper in a large bowl.
Add the cooked chicken, cooked onions, halved cherry tomatoes, and chopped string cheese, and stir to combine.
The arugula can be folded in OR put on the side to serve with the salad, your preference.
Prepare one wrap at a time, as to not overcrowd the air fryer.
Place 1 cut wrap into your air fryer, spray with cooking spray, and season both sides of the chips with the cheese and salt.
Air fry at 370, flipping halfway to ensure the chip gets browned and crispy- cooking times will vary, keep your eye on them.
